For the first half of that time period, I still ate what I now refer to as a "Standard American Diet": largely made up of processed and refined foods. This goes hand in hand with the growing myth that a vegan diet is healthier than a carnivorous diet. It all depends on what is eaten, not what isn't. While my digestion certainly improved and my symptoms vanished, my digestive system wasn't being given the vital nutrients it needed to heal.
Last year, I became a certified Nutrition Educator through a wonderful Holistic Nutrition School. Through that program, I learned how my diet was imbalanced, how our bodies can heal themselves given the proper fuel, and why as a population we're seeing an increasing number of cases of food intolerances and sensitivities.
If you're struggling with a food intolerance or sensitivity, I'd like to offer the hope that one day you will be able to eat that food again without pain. Look after yourself, eat anti-inflammatory, immunity-boosting foods, such as essential fatty acids, gluten-free whole grains, and a rainbow of fruit and vegetables, and you're on the right track.
