2) Whole Wheat Pasta with Homemade Marinara and bread
Cook pasta according to package directions. While pasta is cooking, add 1 can of tomato sauce, 1 can of diced tomatoes, ½ can of tomato paste, ½ c water and one chicken bouillon to medium sauce pan. Sprinkle with 1 tsp Italian Seasoning and dash of salt and pepper. Bring to boil and then simmer. Serve over cooked pasta with sliced demi-loaf.
3) Veggie Burgers w/ Sweet Potato Fries
Rinse beans well in colander. Add about 3 mini rolls to food processor. Pulse until coarse chopped. Add half of beans, mayo, cumin, parsley, cayenne pepper, and oregano to breadcrumbs. Pulse until beans are coarse and everything is well-blended. Add bean puree and extra beans to bowl and mix well. Form mini patties and transfer to plate. Heat grill pan over medium and drizzle with vegetable oil until coated. Grill burgers until both sides are crisp. Let cool. Serve with mini rolls, salsa and sweet potato fries.
4) Turkey Sloppy Joes with Steamed Broccoli
Preheat broiler to high. Add turkey and onion to skillet over medium-high heat. Cook until no longer pink. Add tomato sauce, brown sugar and grill seasoning. Bring to a boil and then simmer for 10 minutes. Halve mini rolls. Place on baking sheets and broil for 2 minutes. Serve Sloppy Joes over top of mini rolls. Serve with steamed broccoli.
5) Fried Rice
Heat 1 T olive oil over medium-high heat. Add scallions and eggs. Brown eggs. Add pork, peas, carrots and rice until rice is slightly crispy. Mix soy sauce and water in small bowl. Pour over top of rice mixture. Mix until all rice is brown. Season with salt and pepper. Serve.
