El Tampico…..
http://nitawatson.com/ blog5/ 2008/ 10/ 09/ el-tampico/We went to a Mexican restaurant for lunch. I had enchiladas, rice and beans, with pico de gallo, chips and salsa. It was good and filling, so for $5.75 it was worth the effort to go there. It would have been nice to have had some guacamole and sour cream on the side. We mostly go to this restaurant

Austin (Veggie) Bites: Vegan Enchilada Roundup
http://northloop.14gram.com/ austin-veggie-bites-vegan-enchilada-roundupPlenty of Austin publications routinely print lists of the best and most popular (which aren’t always the same thing) Mexican and Tex-Mex restaurants in town. When was the last time anyone bothered to ask vegans? Right, right – the words “vegan” and “enchilada” are mutually exclusive.

Fish Nachos, Not Tacos
http://simpledailyrecipes.com/ fish-nachos-not-tacos/Remember when I talked about making Fish Tacos? Well, I wondered what it would be like to make Fish Nachos. Seeing how I didn’t have any tortillas on hand, but a fresh bag of tortillas chips, it seemed like an idea worth trying.

El Jacalito quick-lunch
http://austin.metblogs.com/ 2008/ 09/ 30/ el-jacalito-quick-lunch/There at lunchtime were law-enforcement people, large workplace parties, and family groups. Iced tea was constantly replenished. There were three enchiladas on the plate, not the scanty two that seem to be ever more common around town. The rice was Spanish; the beans were smokey.

http://mobileratty.com/ article/ 0722985cea946dd7eedcfdb66429b6fcIf your smile is too broad, or your face too long, Japan has some torturous-looking machines purporting to act like orthodontic braces, but with other parts of your chops in mind. My Grandmother’s Favorite Southwest Chili
http://cookingwithkimberly.com/ ?p=542This was my grandmother’s favorite chili, and every time she decided she wanted to make it, she would call me in Texas and ask me my recipe. After too many ingredients, she would just laugh and make me promise I’d make it for her the next time I would see her!

Marinated Veggie Fajitas
http://innocentprimate.wordpress.com/ 2008/ 09/ 26/ marinated-veggie-fajitas/I love ordering veggie fajitas we when go out - not only because they are very few other vegan-friendly items on a Mexican menu, but because there are yummy! However, I never think to make them at home.

Tortilla de harina (Flour tortilla)
http://innocentprimate.wordpress.com/ 2008/ 09/ 25/ tortilla-de-harina-flour-tor…While this is a relatively quick and super easy endeavor, and tortillas are pretty much a staple in my kitchen (with mine and Jo’s deep love of spicy tex-mex), I hesitate to call this SOP since I realize there are times when tortillas from scratch are just a step past above and beyond - such as when making a huge feast.
